Royal Hawaiian’s Azure chef brings Spanish flair to local ingredients

HONOLULU (HawaiiNewsNow) – The Royal Hawaiian in Waikiki has a new chef and new menu at its beachfront restaurant Azure.
Chef de Cuisine Jose Reyes and Nadine Madera, restaurant director at The Royal Hawaiian and Sheraton Waikiki, joined HNN’s Sunrise to talk about dishes from their new five-course pairing menu, which showcases local ingredients, from fresh seafood to farm-fresh vegetables.
“The inspiration behind this menu is to blend modern culinary techniques with flavors from my Spanish heritage,” said Reyes, who shares his personal journey as a chef through his food.
Reyes was previously executive chef at Umi by Vikram Garg and 53 by the Sea, where his innovative menus earned Best Seafood honors at the Honolulu Magazine Hale Aina Awards.
Madera said the resort also has a new menu for its Aha’aina luau, which unlike other luaus, is not a buffet, but rather a served meal.
They also talked about an upcoming Truchard Vineyards pairing dinner on October 22, which pairs sophisticated wines with Reyes’ dishes, showcasing seasonal, local ingredients.
